I don't like to eat sweet stuff, but i like to make them. It gives me a great pleasure to bake something good and watch my friends enjoy it. This is one of few exceptions where occasionally i would eat a slice of Chocolate Banana Bread - because it's a KILLER! This is my own twist based on the recipe that i got from my friend's girlfriend Michelle. It's moist, not too sweet and very banana.
1 3/4 all purose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1 stick of butter
1 cup of brown sugar
1/2 cup of walnuts or pecans
1/2 bar of good dark chocolate - roughly chopped
5 very ripe bananas - mashed with fork
Preheat oven to 350F. Stir baking soda, flour & salt and set aside. Melt butter. Use a mixer to combine it with sugar than add eggs & vanilla. Fold in flour mixture with spatchula. Add mashed bananas and stir. At the end fold in nuts and chocolate. Slice a small sliver of butter and grease the pan evenly using your fingers. Pour batter into the pan and bake for 1 hour. To make sure that bread if fully baked use a wooden skewer and slide it in - if it's done , crumbs won't stick to the stick. Enjoy!
