For those of you like me that can't eat garbanzo beans and sesame seeds I created light and yummy hummus that is based on white beans. I was trying to come up with the perfect balance for a while and finally I achieved its goal. Velvety smooth texture, tangy notes and sandy color - this is what i like in my hummus. I eat it with persian cucumbers or fresh baguette. Sometimes i use it as a sandwich paste and top it with tomatoes or chili flakes. It's delicious!
2 cups cooked white beans
2/3 cup pistachios - shelled
1/3 cup pupmkin seeds
1/2 cup warm water
1/2 tsp salt
1/2 tbs rosemary or more if you like it
juice of 2 lemons
Place pistachio nuts and pumpkin seeds in the food processor and grind for few minutes until they totally broken up. Add 1/2 tbs of rosemary and white beans and start grinding again. Gradually keep on adding warm water until all the ingredients are combined and smooth. When hummus looks like a paste add lemon juice and 1/2 tsp of salt.
